Roasted Veggie Pasta. This is a great recipe to use up any sad looking veggies in your fridge! I used: - tomatoes - courgette - red onion - asparagus - tenderstem broccoli - peppers But any kind of veg that cooks relatively quickly will work too. Simple chop up, spread on a baking tray, sprinkle with oregano and drizzle on a little olive oil. Roast at 200c/400f for 10-12 mins then mix with cooked pasta. If you want to add some protein, any cooked meat or prawns would work well. Or add some drain
