| 蒜頭香菇雞湯 | 冬天就是煮湯的好時節。能輕鬆、不費力地端上一鍋暖胃暖身的湯,心情也會跟著被安撫,溫暖起來。 —————— 【食材,4人份】 帶骨雞肉...700g 乾香菇...20g 蒜頭...約6瓣(約30g) 老薑…隨口味 【調味料】 鹽...隨口味 【作法】 備料: 👉 老薑切片;乾香菇稍微沖洗後,以冷水泡軟;蒜頭去皮。 👉 起一鍋冷水,放入雞肉、2片薑片、米酒1大匙,小火加熱至接近沸騰前撈出。沖去雞肉表面的雜質與碎骨(燙煮用的薑片不留)。 ① 取燉鍋,放入燙好的雞肉、泡軟的乾香菇、薑片、清水及少許香菇浸泡水(液量需覆蓋食材或依喜好調整)。蓋上雙鍋蓋(兩鍋蓋的氣孔交錯開來),中小火煮 30 分鐘。 ② 30 分鐘後熄火,不掀蓋再燜 10 分鐘。 ③ 打開鍋蓋,以海鹽調味即可。 【料理筆記】 📌 燜煮時間會因鍋型、火力而異,可依實際狀況微調。 📌 我是預計當湯麵湯底使用,所以水量多留一些(共 1500ml);如果純喝湯,約 1200ml 就很夠。 #湯 | 貝蒂做便當
